Title: Mum's Classic Hot Chilli Pickle

2kgGreen chillies
1/2kgMustard seeds
  Salt to taste
1/2kgGarlic
1kgOil

Grind mustard seeds in grinder. Add ground mustard seeds with garlic in blender and blend. Wash chillies and cut into pieces. Mix together with garlic & mustard seed paste. Add salt to taste. Finally pour oil over it and store away.

This is a classic hot chilli pickle from mum which can be made very easily at home. I've always found that home-made pickles taste much better than anything you can buy mainly because of the fresh ingredients used. Most Indian pickles sold at stores have probably been sitting on the shelves for months and have a "processed" taste. Imran From: JO MERRILL

From: Karen Cook MIRICH ACHAR (chilli pickle) 2lbs long green chillis 2 tablespoons salt 1 tablespoon ground turmeric 1 1/2 tablespoons black mustard seed 1/4 cup vinegar 2 tablespoons chopped garlic 2 cups mustard oil 1 teaspoon black cummin seeds 2 teaspoons crushed asafoetida

Wash chillis well and rub dry. Cut off and discard stalks, slice chillis crossways into 1 cm slices. Sprinkle with salt and turmeric, toss well to mix, cover and leave for 2 days, perferably in the sun for a few hours each day. Soak the mustard seed in the vinegar overnight, and next day grind in electric blender together with the garlic to form a puree. Heat oil in a large pan, add the fenugreek seeds and black cummin seeds. Stir and fry until fenugreek is golden brown, then add the asafoetida, stir once, and add the blended mixture and the chillis together with the liquid that comes from them. Cook and stir occasionally until oil rises and chillis are cooked. They should not be too soft. Cool and put into a sterilised bottle.
